Watermelon Star Salad
Five wedges of watermelon (without rind) form a star. In the middle of it, spoon cottage cheese and sprinkle with blueberries (or others). You can serve with Fruit Dressing.

Fruit Dressing
1/2 c. sugar
1 egg, beaten
1 Tbsp. orange juice
1 Tbsp. lemon juice
1 Tbsp. lime juice
Mix sugar and beaten egg with the juices in a saucepan. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute; cool. Refrigerate until serving time. 1 1/2 cups.
Watermelon Birthday Cake

Another idea is making a "birthday cake" by stacking thick round slices of watermelon to make a layer cake shape. This would leave the rind on. Then use skewers with cubes of other fruits to decorate it. This sounds good for when it's hot, and heating an oven or eating something heavy like cake is not appealing.
Watermelon Slushies
Seeded watermelon chunks can be frozen to use in watermelon slushes or fruit smoothies. Watermelon sorbet or granita stays fresh in the freezer for up to 3 months. The difference between a sorbet and a granita is in the texture. Sorbets are smooth, whereas granitas are coarse. You do not need an ice cream maker to make a granita.
